Lemon meringue pie

Don’t make me laugh! Looking all serious and butter-wouldn’t-melt in-your-mouth. Can’t be sentimental about a complete classic - disarming, white, fluffy, crisp charm. A sweet, whipped up whispy cloud of confection with a hold-it-over-your-head-and-wait attitude. Heavenly, soft peaks with a gooey, sugary sweet centre. Don’t let that perfect, sparkling upper crust fool you - underneath lies a mysterious, luscious, lip-lickable layer below the you-wouldn’t-know-if-you-didn’t-know exterior. A tangy, tart explosion of acerbic good taste. Smooth and cool with a zest for life. Up periscope and take what you need when you fancy; just don’t over face yourself. One slice will leave you wanting more. I’m sure.
